Makes 12 bites
Ingredients
- ½ cup quinoa, uncooked
- 2 eggs
- ¼ onion, finely chopped
- 1 cup mozzarella, shredded
- 1 clove garlic, minced
- 2 tablespoons basil
- 2 tablespoons oregano
- Pizza sauce for dipping
Instructions
- Preheat oven to 350 degrees. Bring quinoa and 1 cup water to a boil over medium-high heat. Cover and simmer for 15-20 minutes. Combine quinoa eggs, onion, mozzarella, garlic, basil, and oregano into a large bowl and stir.
- Divide mix into a muffin pan.
- Bake for 15-20 minutes and serve with dipping sauce.
